The new menus celebrate locally sourced ingredients, vibrant flavours and summer’s favourite sip – rosé
With summer now in full swing, The Ivy Belfast is raising a glass to sunnier days with a vibrant new summer edit, brimming with flavour, fizz and flair. Just in time for the sunshine, the restaurant has unveiled its new summer menu that celebrates the finest Irish produce alongside a selection of stunning, rosé-based summer cocktails.
Among the standout cocktails is the Peach and Leaf — refreshing and elegant, crafted with Whispering Angel, fig leaf peach cordial and soda water, made for moments worth celebrating.
For those seeking something a little more playful, The Ivy’s summer cocktails bring bold creativity to the classics. The Angel Margarita elevates a fan favourite, layering Volcan Tequila, Aperol, lime juice, strawberry syrup and Whispering Angel, a sun-kissed twist on the original. The Gimlet is a true showstopper, with Belvedere, Whispering Angel, citrus and sage syrup for a refreshingly herbaceous sip. For those who prefer something fresh and fruit-forward, the Raspberry and Rhubarb cocktail or Veuve Strawberry Mojito promise to keep the good times flowing.
Head Chef Shannon Clark and his team have curated a summer menu that blends the best of Irish produce with light, vibrant and full of flavour dishes. Highlights include The Ivy Classic Crispy Duck Salad with Monaghan’s Silver Hill Duck and the Bob Calhoun’s Heirloom Tomatoes and Watermelon Salad with plant-based cream cheese and pistachios. For something with a little more punch, try the Tempura Prawns, served with kimchi sauce or Salt and Pepper Squid with miso-wasabi mayo.
Sunshine-ready mains include the Crab and Kilkeel King Scallop Nero Linguine with squid ink pasta, tomato, basil, parsley and chilli, Prawn Tagliatelle with lemon and fennel, and the Asian-glazed Robatayaki Half Chicken with plum sauce and jalapeño. Those who prefer something meat-free can enjoy the Chargrilled Halloumi on spiced fregola, or the fragrant Keralan Sweet Potato Curry – comfort food, reimagined for summer.
To end on a sweet note, desserts showcase the season’s best – from theStrawberry & Elderflower Trifle, layered with Savoiardi biscuits, Conway farm strawberries, lavender and vanilla cream, to the Bushmills Whiskey Crème Brûlée, with Bushmills Whiskey and vanilla custard with a scrumptious caramelised sugar crust.
